Inflation occurs through several strategies: pumps ram-air billowing and suction. Smaller-scale inflatables (such as pool toys) generally consist of one or more "air chambers" which are hollow enclosures bound by a gentle and flexible airtight material (equivalent to vinyl) which a gas can enter into or leave from through valves (regularly one on each air chamber).
Inflatables came very much into the public eye as architectural and domestic object when synthetic material became commonplace. Iconic structures like the US Pavillion on the 1970 Osaka Expo by Davis and Brody and Victor Lundys travelling pavillion for that Atomic Energy Commission popularized the idea that inflatables can be a way to build large structures with very extendend interior spans without pillars. These nice hopes for inflatable structures would later be dashed by the many practical difficulties faced by inflatable buildings such as climatization safety sensitivity to wind and fire proofing that currently restrict their use to very particular circumstances.
You simply grab the cockpit of the kayak and pull yourself up like youre getting out of a swimming pool. This makes an inflatable kayak very convenient for snorkeling or swimming. Before getting back in it is easy to dump out any water that gets aboard. Some inflatable boats are even self bailing. Another misconception about inflatable kayaks is that they have very poor maneuverability. People think you would have very little control in an inflatable kayak. This isnt the case with newer inflatable kayaks though. Many of these inflatable boats have optional foot controlled rudders to make for easy turning without missing a stroke.
